Quality grade is given by a USDA grader through visually observation in large packing plants but not widely accessible for smaller packing plants and niche marketers; however, we have the ability to assign a "quality grade equivalent" with ultrasound by measuring percent intramuscular fat in live cattle and equating that to the marbling scale that conumers know so well as prime, choice, select. This reflects the amount of "taste fat" or fat inside the muscle that allows a cut to be juicy and more forgiving when it comes to overcooking it. Marbling or percent intramuscular fat should never be confused with seam or external fat known as "waste fat" and will simply be cut off by the consumer.
