Forage Finished is the primary two avenue
of market for Rimrock Cattle Company. Rimrock Cattle Company is an integrated family business that has
chosen to compete with the ever increasing competition to
operate in ways that defy the general agricultural response.
Due to increasing operational costs and attempting to
maintain a sustainable profit margin, Rimrock chose to
concentrate on quality rather than use quantity to artificially
lower operating costs.
Using technologies such as ultrasound, strategic genetic
selection, unwavering culling practices, and by embracing
change, Rimrock
pioneered into a position that allows us to stand apart from the
average beef operation.
Years of attention to detail and drive to constantly
improve quality has given us the opportunity to provide a
product to the public that is produced on talent alone without
the aid of artificial inputs thus allowing us to be sustainable
in today’s industry.

We caution against using the term
grass finished
and prefer the term
forage finished.
Here’s why:
Rimrock utilizes a variety of high quality forages from birth to
harvest. Cattle are
managed to maximize native forage nutritive values in terms of
calving season. We
practice stewardship by matching the greatest nutrient demands
in our cattle to occur when the indigenous forage supply peaks
to reduce the need for any additional inputs.
Upon weaning, the calves are placed on forages such as legumes
or cool season perennials and annuals that are naturally high in
nutritive value.
Using carefully formulated medleys of seed, the goal is to have
a staggered forage pattern in which the cattle are constantly
exposed to new tender growth of forage before exhausting the
supply of another within one stand of forage.
Additionally, the incorporation of legumes and
conservative stocking rates helps to eliminate need for
fertilizers and herbicides, thus one more way we attempt to
contribute to our stewardship goal.
We would rather use methods such as aeration, rotational
grazing, and strategic placement of mineral supplementation to
maximize productivity and utilization of pasture instead of
having to rely on chemical inputs.
Cattle are continually grown on forage inputs until harvest.
Upon achieving mature age and size, Rimrock places cattle
in large paddocks or small pastures, whereas the conventional
method would include placing cattle in confinement feeding or a
feedlot. In this feeding set-up, Rimrock cattle are allowed
20-30 times the size of pen they would typically receive in a
conventional feedlot.
What Does Forage Finished Beef Offer?

Forage Finished beef offers producers all the benefits of grain
fed beef, along with the satisfaction that forage finished
cattle are produced in a fashion that is more desirable and
sustainable than conventional methods.
The use of grain is eliminated, and forage finished
cattle are expected to achieve a level of marbling dependent
solely upon genetic potential, management, and formulation of
forage inputs.
The benefit of forage finished is two fold
Number one, with the competition of ethanol for the corn
production, producers are subject to higher than historical cost
of gain. Forage
finished beef eliminates that price variable.
Secondly, it provides the consumer with a product that is
wholesome and has two specific benefits which are reflected in
the altered fatty acid profile.
Forage finished beef
has higher levels of omega 3 fatty acids as well as
conjugated linoleic acids (CLAs).
Both of these fats have been shown to have a world of
health benefits including but not limited to:
suppression of cancerous tumors, regulation of blood
glucose, reduction of insulin dependence, maintenance of healthy
body weight, lower triglyceride population, increase in HDL
cholesterol, and increase in lean body mass with reduction of
body fat.
The Process

After careful thought, Rimrock pin pointed the type of beef it
sought to produce.
A product that was premium and consistent.
Moderate size and exceptional quality became the
standard.
Exceptional quality includes not only carcass composition but
maternal productivity as well.
Founded on the principles of sustainability and
stewardship, the management of Rimrock orchestrates a web of
variables that are carefully integrated with an eye toward
balance and moderation.
The base cow herd was developed by the sister company,
Clement
Cattle Company through a desirable genetic base improved with
selection based on performance, and strategic matings with bulls
that complimented
cows they were bred to.
An Angus base was used for the traits of early puberty,
moderate size, and higher intramuscular fat percentages.
However, these traits were quantified through production
performance and selection was made within the herd as a result.
Generations later, Clement Cattle Company had a base cow
herd that included only those individuals that continually
measured up to rigid performance standards and are indeed the
“cream of the crop”.
